Pumpkin pie filling

3/4 cup brown sugar
1 tbsp. flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. allspice
1/4 tsp. cloves
1 1/2 cups pumpkin
3 eggs
2 tbsp. molasses
1 1/2 cups evaporated milk

Mix all ingredients and pour onto pie crust. Bake at 450F. for 10 minutes, and then at 325F. for 31 minutes or until firm.

Plantation Crunch

2 lbs. almond bark
1/4 cup peanut butter
4 cups rice krispies
1 cup peanuts (can use peanut m&m's)

Melt almond bark and peanut butter over low heat or double boiler. Add mixture to rice krispies and peanut m&m's.

Spread in buttered 9x13 pan and cool.

Apple pie filling

5 apples, peeled, cored, thinly sliced
3/4 cup sugar
1 tsp. cinnamon
2 Tbsp. flour

Mix together and put in pie crust to bake!

Pie crust

2 1/2 cups flour
3/4 tsp. salt
1 cup vegetable shortening
1 egg
3 Tbsp. milk


Mix on low in mixer. Divide in half. Roll out with flour. (I usually roll it out on plastic wrap so it's easier to pick up and place in pie plate/tin.)

This recipe makes both top and bottom crust, so half all ingredients (except the egg) to make only the bottom for pies that don't require a top.

Bake at 375F. for 20 minutes or until it starts to turn brown on edges.

Steph's sausage and cheese soup

1/2 onion
1 Keilbasa sausage
2 1/2 cups water
3-5 potatoes - cubed with or without skins on
2 cans cream of chicken soup
2 cups cheddar cheese

Fry sausage and onion. Add water and cook potatoes till fork tender. Add soup and take off heat. Add cheese.



Easy and yummy!

Baked Potato Soup

2 large baking potatoes
3 Tbsp. sliced green onion
1/3 cup margarine or butter
1/3 cup flour
2 tsp dill (optional - I never use this)
1/3 tsp. salt
1/4 tsp. pepper
4 cups milk
3/4 cup cheese
3 Tbsp. green onion
4 slices bacon, crisp cooked and crumbled

Bake potatoes and let cool. Cut potatoes in half and scoop out pulp, discard skins.

In saucepan cook 3 tbsp. green onion in margarine or butter till tender, stir in flour, dill, salt and pepper. Add milk all at once. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Add the potato pulp and 1/2 cup of the cheese. Stir until cheese melts.

Garnish each serving with remaining cheese, green onion and bacon.




This soup is even better with more cheese and bacon added!

Cheese Ball

2 pkg cream cheese
1 cube butter or margarine
cheddar cheese, grated (fine)

Mix butter & cream cheese with mixer. Add garlic powder, onion salt, salt & pepper, paprika, worsterchester sauce (all to taste); add 1 tsp lemon juice and grated cheese (however much you like-we use 1# of cheddar cheese with 2 pkgs cream cheese). Shape, roll in nuts, parsley, grated cheese or paprika. You may want to add chives, etc., to your own taste.

Holiday Popcorn Stuffing

2 cups bread crumbs
1 onion chopped
salt & pepper to taste
1 cup unpopped popcorn
1 cup water
1 tsp sage
2 eggs Mix all together

Stuff turkey and bake at 350 degrees. It will be done when the popcorn blows the --- (tail feathers) off the turkey.

Wassail

2 cups sugar 2 quarts water
Boil together for 5 minutes, add:

10 whole allspice 10 whole cloves
6 sticks of cinnamon
Turn to low and simmer for 1 hour, add:

1/2 gallon apple cider
1/2 cup lemon juice
16 ounce can orange juice concentrate,
3 cans water.

Heat and serve
Old Fashioned Fruit Cake

1 pound raisins 1/4 tsp cloves
2 cups sugar 1/2 tsp salt
1 cup shortening 3 cups hot water
2 tsp cinnamon 3 pounds candied fruit
2 tsp nutmeg 1 cup chopped nuts

Boil together for five minutes, cool to "blood" temperature.
Add 2 tsp baking soda, and flour. Bake in slow oven 300-325
