Pumpkin pie filling

3/4 cup brown sugar
1 tbsp. flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. allspice
1/4 tsp. cloves
1 1/2 cups pumpkin
3 eggs
2 tbsp. molasses
1 1/2 cups evaporated milk

Mix all ingredients and pour onto pie crust. Bake at 450F. for 10 minutes, and then at 325F. for 31 minutes or until firm.

Plantation Crunch

2 lbs. almond bark
1/4 cup peanut butter
4 cups rice krispies
1 cup peanuts (can use peanut m&m's)

Melt almond bark and peanut butter over low heat or double boiler. Add mixture to rice krispies and peanut m&m's.

Spread in buttered 9x13 pan and cool.

Apple pie filling

5 apples, peeled, cored, thinly sliced
3/4 cup sugar
1 tsp. cinnamon
2 Tbsp. flour

Mix together and put in pie crust to bake!

Pie crust

2 1/2 cups flour
3/4 tsp. salt
1 cup vegetable shortening
1 egg
3 Tbsp. milk


Mix on low in mixer. Divide in half. Roll out with flour. (I usually roll it out on plastic wrap so it's easier to pick up and place in pie plate/tin.)

This recipe makes both top and bottom crust, so half all ingredients (except the egg) to make only the bottom for pies that don't require a top.

Bake at 375F. for 20 minutes or until it starts to turn brown on edges.

Steph's sausage and cheese soup

1/2 onion
1 Keilbasa sausage
2 1/2 cups water
3-5 potatoes - cubed with or without skins on
2 cans cream of chicken soup
2 cups cheddar cheese

Fry sausage and onion. Add water and cook potatoes till fork tender. Add soup and take off heat. Add cheese.



Easy and yummy!

Baked Potato Soup

2 large baking potatoes
3 Tbsp. sliced green onion
1/3 cup margarine or butter
1/3 cup flour
2 tsp dill (optional - I never use this)
1/3 tsp. salt
1/4 tsp. pepper
4 cups milk
3/4 cup cheese
3 Tbsp. green onion
4 slices bacon, crisp cooked and crumbled

Bake potatoes and let cool. Cut potatoes in half and scoop out pulp, discard skins.

In saucepan cook 3 tbsp. green onion in margarine or butter till tender, stir in flour, dill, salt and pepper. Add milk all at once. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Add the potato pulp and 1/2 cup of the cheese. Stir until cheese melts.

Garnish each serving with remaining cheese, green onion and bacon.




This soup is even better with more cheese and bacon added!

Cheese Ball

2 pkg cream cheese
1 cube butter or margarine
cheddar cheese, grated (fine)

Mix butter & cream cheese with mixer. Add garlic powder, onion salt, salt & pepper, paprika, worsterchester sauce (all to taste); add 1 tsp lemon juice and grated cheese (however much you like-we use 1# of cheddar cheese with 2 pkgs cream cheese). Shape, roll in nuts, parsley, grated cheese or paprika. You may want to add chives, etc., to your own taste.

Holiday Popcorn Stuffing

2 cups bread crumbs
1 onion chopped
salt & pepper to taste
1 cup unpopped popcorn
1 cup water
1 tsp sage
2 eggs Mix all together

Stuff turkey and bake at 350 degrees. It will be done when the popcorn blows the --- (tail feathers) off the turkey.

Wassail

2 cups sugar 2 quarts water
Boil together for 5 minutes, add:

10 whole allspice 10 whole cloves
6 sticks of cinnamon
Turn to low and simmer for 1 hour, add:

1/2 gallon apple cider
1/2 cup lemon juice
16 ounce can orange juice concentrate,
3 cans water.

Heat and serve
Old Fashioned Fruit Cake

1 pound raisins 1/4 tsp cloves
2 cups sugar 1/2 tsp salt
1 cup shortening 3 cups hot water
2 tsp cinnamon 3 pounds candied fruit
2 tsp nutmeg 1 cup chopped nuts

Boil together for five minutes, cool to "blood" temperature.
Add 2 tsp baking soda, and flour. Bake in slow oven 300-325

Hot Cocoa

For the times when you've got more time and motivation than the usual dump a pack of mix into milk, this is delicious and decadent!

1/2 c. sugar
1/4 c. cocoa
dash salt
1/3 c. hot water
4 c. milk (2 milk, 2 evaporated milk)
3/4 tsp. vanilla

Mix sugar, cocoa and salt in a saucepan. Stir in water. Cook and stir over medium heat until it boils. Boil and stir two minutes more. Stir in milk and heat. Do not boil. Remove from heat and stir in vanilla.

Potato Cheese Soup

1 c chopped onion
1 c chopped celery
2 c chopped potato
3/4 c flour
3/4 c butter
1 qt half and half
1 1/2 tsp salt and pepper
1/2 tsp sugar
cheddar cheese

cover vegetables with water. Bring to a boil, simmer until potatoes are tender, not mushy. While that is cooking melt butter. Add flour and blend. Cook until thick. Slowly add half and half and cook until smooth and thickened. Add salt. pepper, and sugar. Stir in vegetables and 1 cup liquid from vegetables. Heat through and remove from heat. Add about 1 cup of cheese to taste.

Chicken Stew

15 oz can kidney beans
15 oz can black beans
15 oz can white beans
15 oz can diced tomato
15 oz can corn

1 pkg dry ranch dressing mix
1 pkg taco seasoning
3 cups of water
2-3 half chicken breast cooked and shredded

Pour all ingredients in, bring to a boil, cook for 20 min on low after boils.

Serve with shredded cheese, sour cream, and fritos

Pulled Pork

1 TB dried minced onion
2 tsp salt
2 tsp garlic powder
2 tsp dried oregano
1 tsp dried rosemary
1 tsp celery seed
1/4 tsp cayenne pepper

1 boneless pork (3-4 lbs)

combine seasonings, put in slow cooker, con on low (6-8 hrs) Shred with fork.

Pizza dough (pizza pie!)

4 1/2 cups flour
1 tsp. salt
1/4 cup olive oil
2 pks dry yeast
1 1/2 cups warm water
2 tsp. brown sugar

Mix flour and salt. Mix together water, yeast, oil and sugar. Add to dry ingredients. Mix in mixer (kitchenaid or bosch works best) until dough is formed.

For thicker crust pizzas let rise for a few hours.



We roll it out onto a pizza peel. When at desired thickness, put cornmeal under dough so it will slide off peel easier.


Add sauce and desired toppings.


Bake at 400F. or higher until cheese is bubbly.

Boston Cream Pie Minis

1 pkg (2 layer size) yellow cake mix
1 cup cold milk
1 pkg (4 serving size) Jell-O Vanilla Flavor instant pudding and pie filling
1 1/2 cups thawed cool whip , divided
4 squares Baker's semi-sweet baking chocolate

Preheat oven to 350 degrees. Prepare cake batter and bake in 24 greased medium muffin cups as directed on package. Cool 10 min in pans. Remove to wire racks; cool completely.

Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk for 2 min. or until well blended. Let stand 5 min. to thicken. Meanwhile, using a serrated knife, cut cupcakes horizontally in half. Gently stir in 1/2 cup of the whipped topping into the pudding. Spoon about 1 Tbsp of the pudding mixture onto bottom half of each cupcake; cover with tip of cupcake.

MIcrowave remaining 1 Cup whipped topping and the chocolate in small microwaveable bowl on HIGH 1 1/2 min. or until ckocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Frost each cupcake with about 1 1/2tsp of chocolate mixture. Refrigerate at least 15 min before serving.

Triple Chocolate Cake

1 pkg (8 squares) Bakers Semi-Sweet Baking Squares, divided
1 pkg (2 layer size) chocolate cake mix
1 pkg (4 servings) Jell-O Chocolate Flavor Instant pudding and Pie filling
4 eggs
1 cup sour cream
1/2 cup oil
1/2 cup water
1 tub (8 oz) Cool Whip

Preheat oven to 350 degrees. Grease two 9-inch round baking pans. Chop 2 of the chocolate squares; set aside. Beat cake mix, dry pudding mix, eggs, sour cream, oil, and water in large bowl with electric mixer on low speed just until moistened. Beat on medium speed 2 min. Stir in chopped chocolate. Spoon into prepared pans.

Bake 30-35 min or until wooden toothpick inserted in center comes out clean. Cool in pans on wire racks 10 min. Loosen cakes from sides of pans. Invert onto racks; gently remove pans. Cool cakes completely.

Place frozen whipped topping and remaining 6 chocolate squares in microwaveable bowl. Microwave on HIGH 1 1/2 min or until chocolate is completely melted and mixture is smooth, stirring after 1 min. Let stand 15 min to thicken. Place 1 cakes layer on serving plate; top with 1/4 of the chocolate mixture and the second cake layer. Spread top and side with remaining chocolate mixture.

Store in fridge.

Chocolate Malt Ice Cream

6-8 eggs
1 15 oz bottle chocolate malt
1 pint whipping cream
1 pint half and half
1 quart chocolate milk
2 T vanilla

Beat eggs. Add whipping cream and half and half. Then add chocolate malt. Add chocolate milk and vanilla.

Crème Brûlée

4 cups heavy cream
1 tsp. vanilla extract
1/2 cup sugar
6 egg yolks
1/2 cup brown sugar

Preheat oven to 300F. In a medium sauce pan, heat the cream and vanilla to a simmer. Remove pan from heat. Mix egg yolks and sugar until they are a pale yellow. Whisk cream into the egg mixture and pour into custard dishes.

Place dishes in a large baking dish. Pour boiling water into baking dish so it comes to half way up the custard dishes. Bake for 30 minutes or until custard is firm but still wiggles. Chill for at least one hour.

Top with brown sugar in an even layer and place under broiler until sugar melts and bubbles (or use a torch). Serve at room temperature.

Ma's Bread

5 2/3 c. Hot Water
6 T Sugar
1 T Salt
2/3 c. Oil
10-13 c. Flour
4 T Yeast
2/3 c. Powdered Milk

Mix water, sugar, salt, oil and 3 c. flour. Add yeast. Mix in 3 more c. flour and yeast. Gradually add enough flour for good consistency (about 10-14 c. flour total) Let dough rise covered for 30-45 minutes in a warm dry place. Knead dough. Form into loaves, let rise again.

Bake at 350 until golden brown.

Super Awesome Yummy Chocolate Cake

1 Chocolate Cake Mix
1 Instant Chocolate Pudding Mix
1 c. Vegetable Oil
4 Eggs
1/2 c. Hot Water
1 c. Sour Cream
1 t. Vanilla
1 c. Mini Chocolate Chips

Preheat oven to 350. Grease and flour bundt pan. Mix cake mix, pudding mix, oil, eggs, water and sour cream. Add vanilla. Stir in chocolate chips. Pour into bundt pan. Bake for 1 hour. Cool before serving.

Grandma Henney Brownies

1 cup shortening
2 cups sugar
4 eggs
1-1/2 cups flour
2/3 cup cocoa
1/2 cup milk
3 tsp. vanilla
1/2 cup nuts

Cream together shortening and sugar. One at a time add eggs, beating well after each. Alternate flour and cocoa with milk. Add vanilla and bake at 350F. for 25-30 minutes.

Cut while hot!

Molasses Cookies

1-1/2 c. shortening
2 c. sugar
1/2 c. molasses
2 eggs
4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. ginger
1 tsp. cloves
4 c. flour

melt shortening. Cool. Add to sugar,molasses and eggs. Beat well . Add dry ingredients. Mix well. Chill. Form 1" balls. Roll in sugar. Bake 350F. 8 to 10 minutes.

Applesauce Cookies

1 egg
1/2c. shortening
1c. brown sugar
2c. flour
1c.applesauce
1tsp.cinnamon
1tsp.soda
1/2tsp. baking powder
1/2tsp. salt
1/2tsp.nutmeg
1pkg. chocochips

cream together sugar and shortening. Add egg and beat well. Blend in applesauce. Sift together flour and dry ingredients. Add to liquid mix and stir only til blended. Stir in chocolatechips. Bake at 350F. for about 8 minutes.

Baked Beans

2 medium cans (31 ounce) pork and beans
1 onion, chopped
1/2 cup packed brown sugar
1/2 cup scant molasses
1/2 cup ketchup
Enough bacon to layer over the top.

Put mixed ingredients in a greased a casserole pan, and bake at 300 degrees for 1-1/2 hours.

You can also put it all in a crockpot and slow cook.

Pretzel Salad

Crust:

1-1/2 cup crushed pretzles
3/4 cup melted butter
2 tbsp. sugar

Mix all ingredients and bake at 350 for 10 minutes.

Second layer:

8 ounces cream cheese
1 cup sugar
8 ounces cool whip

Mix together and spread over crust.

Third layer:

1 large package raspberry jello
10 ounces frozen raspberries
2 cups boiling water

Mix water and jello, slightly crush raspberries and add to jello mixture. Pour over the top of second layer. Refrigerate until set.

Fruit Dip

1 cup sugar
2 tbsp. sornstarch
1 cup hot water
juice and grated rind from 1 orange and 1 lemon

Cook until thick, and cool for about one hour.

Add one cup of whipped cream when ready to serve.

Bran Muffins

1-1/4 cup flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1-1/2 cup bran flakes
1 cup milk
1 egg
1/4 cup shortening (or vegetable oil)

Sift together flour, baking powder, salt and sugar. Cut in the shortening, then add bran flakes. Mix together egg and milk and add to dry ingredients.

Bake at 400 degrees for about 25 minutes.
